Crispy Air Fryer Buffalo Cauliflower
If you are someone like me who didn’t even try cauliflower until about 8 years ago, give cauliflower another chance. This recipe is great as an appetizer or a light lunch or dinner.
What is the trick to getting things extra crispy in the air fryer?
Avocado oil spray is a staple in my kitchen. For some reason it’s zero WW points, even though the only ingredient is avocado oil. Be sure to spray the cauliflower liberally. Double dipping your cauliflower in the wet batter/dry batter/wet batter/dry batter ensures a crispy coating.
Ingredients needed to make buffalo cauliflower:
- cauliflower – one head of cauliflower is about 3 cups
- seasonings of choice: we used salt, pepper, onion powder, garlic powder and paprika
- milk of choice – we used fat free milk, but almond or cashew works
- eggs
- buffalo sauce

Crispy Air Fryer Cauliflower
If you think you don't like cauliflower, try these crispy buffalo air fryer cauliflower - so delish!
Ingredients
- 3 cups cauliflower florets
- 1.25 cups flour
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprik
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup milk of choice
- 2 large eggs
- 1/3 cup buffalo sauce
Instructions
- Preheat your air fryer to 380°F (193°C).
- Prepare the dry mixture:
- In a bowl, mix flour, garlic powder, onion powder, paprika, salt, and pepper.
- Prepare the wet mixture:
- In another bowl, whisk together the milk and eggs.
- Coat the cauliflower:
- Dip each cauliflower floret into the wet mixture (milk/eggs), ensuring it's fully coated.
- Then, dip it into the dry mixture, covering it well.
- For extra crispiness, repeat this process by dipping the floret back into the wet mixture and then into the dry mixture again. This double dipping creates a thicker coating, resulting in a crispier texture.
- Cook in the air fryer:
- Place the coated cauliflower florets in a single layer in the air fryer basket. Ensure they are not overcrowded to allow even cooking.
- Air fry at 380°F (193°C) for 8 minutes. Shake the basket halfway through cooking to ensure even crisping. NOTE: depending on the size of your air fryer, you may have to do this in batches.
- Toss in buffalo sauce:
- Once the cauliflower is crispy and golden, transfer it to a bowl and toss it with buffalo sauce until evenly coated.
- Serve immediately:
- Enjoy your crispy buffalo cauliflower bites with a side of celery sticks and your favorite dipping sauce, like ranch or blue cheese.
By double dipping the cauliflower florets between the wet and dry mixtures, you'll achieve a delightfully crispy coating that's perfect for soaking up that tangy buffalo sauce.

Storage Tips for Buffalo Cauliflower
If you have leftovers or want to prepare your buffalo cauliflower in advance, follow these storage tips to maintain their crispness and flavor:
- Cooling Down:
- Allow the buffalo cauliflower to cool completely at room temperature before storing. This helps prevent condensation, which can make them soggy.
- Refrigeration:
- Place the cooled cauliflower in an airtight container. To maintain crispiness, consider lining the container with a paper towel to absorb excess moisture.
- Store in the refrigerator for up to 3 days.
- Reheating:
- For the best texture, reheat the buffalo cauliflower in the air fryer. Preheat the air fryer to 380°F (193°C) and cook for 3-5 minutes, or until heated through and crispy.
- You can also reheat them in the oven at 375°F (190°C) for about 10 minutes. Avoid using the microwave, as it can make the cauliflower soggy.
- Freezing:
- If you want to store the buffalo cauliflower for a longer period, you can freeze them. Arrange the cooled cauliflower florets in a single layer on a baking sheet and freeze until solid. This prevents them from sticking together.
- Once frozen, transfer the florets to a freezer-safe bag or container and store for up to 2 months.
- Reheat from frozen in the air fryer at 380°F (193°C) for 10-12 minutes, or until heated through and crispy.
