Rocco DiSpirito’s New Eat This Diet Book

No-Boil Mushroom Lasagna
- 4 servings: Per Serving: 388 calories, 15 fat, 34 carbs, 3 fiber and 28 portein = 10 PointsPlus
Ingredients:
- 2 cups reduced-fat ricotta cheese
- 1/2 cup chopped fresh basil
- 2 tablespoons chopped fresh flat-leave parsley
- 1 cup grated Parmesan cheese
- freshly ground black pepper
- 4 ounces (about 8 sheets) no boil whole wheat lasagna noodles
- 10 ounces sliced cremini mushrooms
- 4 ounces white button mushrooms
- 1/2 cup shredded reduced-fat mozzarella cheese
Directions: Preheat the oven to 350. Coat the inside of an 8x8x2 inch baking pan with cooking spray and set aside.
In a medium bowl, add the ricotta, basil, parsley and 1/2 cup Parmesan cheese. Mix with a spoon until blended. Season with salt and pepper to taste. Set aside.
Line the bottom of the prepared baking pan with two lasagna sheets. Top with 1/4 cup of the cheese mixture. Using the back of a spoon, spread the mixture so that the noodles are completely covered. Top with a layer of mushrooms. Repeat the procedure two ore time.s On the last layer, place two lasagna sheets on top of the mushrooms. Spread a layer of the remaining cheese mixture on top. Scatter the mozzarella and remaining Parmesan cheese on top.
Cover tightly with foil and bake in an oven for 30 minutes. Raise the temperature to 425 degrees and bake for another 15 minutes. Uncover the dish and continue to bake for another 15 minutes, or until the top is golden brown.

Hi, I’m losing weight to get back in my wedding dress & to help my husband lose weight because he is at an unhealthy weight level. I’m very motivated but I don’t know what to eat. Sometimes I go too long without eating & sometimes I eat the wrong things. I would love to have a copy of this book because it will help my whole family to have balanced meals. Hello,I have no motivation when it comes to making myself diet,I have tried other diabetic cook books,but go back to my old eating habits.i am 6.8 on the diabetes scale if that means anything? and I really do not wont to take medicine so I need a great diet something easy with good thing in it and things that I can go to the store to buy that wont brake the wallet.When you were on GMA and made the hamburger that looked so good it made me think maybe this book is the one ,hope so ,I will be checking you out on face book now that I know you are on there.Thank you much and hope you have a wonderful day.Judy

I’m choosing to lose weight since my recent retirement, not only to improve my health, but to enjoy my life after retirement. That can be spending better time with my 1-yr old grandson, Noah,…taking a western Elk hunt in the fall with a friend,…or just enjoying work around the yard with my wife of 39 years. I have struggled with my weight for the last 20 years, up and down yoyo dieting and am now at the point in my life where it is time to say “It is time for me”! I am going to the gym, watching a balanced diet, counting calories and trying to focus on living a better life. i love Rocco and think that his book might be a great match for me. I want to lose weight cause I am tired of being overweight. I started 2 years ago and have lost 54 pounds and kept it off through portion control and changing my habits a little. I have recently incorporated chair yoga (I have knee problems) and walking.
I saw your book but could not afford it. I found the website and have been using the receipes there for about a week. My husband is diabetic so the receipes are friendly to his diet too. Some I adapted a little to accomodate our family but everyone has been raving! I intend to keep cooking, losing and walking until I reach my goal. I have about 120 ponds to go but I am sure that I can do it!
I saw this cookbook today at walmart and it looks amazing with lots of good recipes and exercise tips. I wanted to buy it but I thought I would wait and see if I can win this one. I would love to get this book! I will be 59 years old on April 7th. I am overweight, high blood pressure, and depression.Maybe if I can lose the weight, the other things will get better. I’m tired of being big, and having health issues probably of my own making.We are planning on moving south in a year or so, and I would like to be healthy enough to enjoy the end stage of my life.
To be honest, when I started losing weight, my original motivation was totally aesthetic! But as I started getting more into eating healthfully and working out, my motivation slowly moved more towards becoming overall healthy. Now I’m actually maintaining, not losing weight (almost a year in!), and I do feel healthier and happier. 🙂
My motivation is when my Mom passed away due to weight related diabetes. I have tried every diet known to man and I feel this would give me the cooking skill that I need for diet food that tastes good, not like cardboard or loaded with preservatives.
I have been overweight most of life. My mother was super skinny growing up and she was bullied due to her weight. So she made sure I was chubby. But the standards in society had changed and I was bullied because I was fat. But that is not what motivates my reason to lose weight. I have been having health concerns for a long time and was finally and recently diagnosed with fibromyalgia. I am not able to carry my weight over. I need to lose these extra pounds so my joint will feel less pressure. I tend to be in more pain the more I weight. Been doing a decent job so far but I need recipes to help me maintain that life journey. I have heard great things about Rocco’s recipe and my friend shared the brownies recipe with me…yummy! So would be thrilled to have my own book. Grad student budget doesn’t allow such spending. Thus I will be grateful to receive one of these books. Anyhow good look to all!

My motivation to lose weight is my future. My future involves hopefully having children and I want to be healthy for them. I want to see my future kids grow up, graduate, and get married. I have tried all the other diet technques that you can think of , but when I saw this on “The View”, I was just amazed at the delicious looking food on the table. I was so encouraged by Rocco’s comments about how you can eat great tasting food without all the calories. My sister, who can eat any and every thing looked at me and said ” you NEED try this!!” She loves to cook and also wants a new way to cook great **healthy** food not just for me, but also, for our 80 yr old Mom who just recently had open heart surgery this past July. I was just recently married and about to graduate from grad school. I am beginning my new life and that is my motivation to be the healthiest I can be. I hope to have children someday soon and I want to be around for as long as I can!!
My mom passed away September 1, 2008. I have since lost 80 pounds and would like to loose 30 more! However, I could really use this book to help me loose those last 30!!!! I already feel much better, but could use this to help me finish the job…..and help me stay there!!!!

Being an Italian grandmother, I like to serve delicious food to my children and grandchildren and still be able to diet at the same time. Your recipes provide “good food” while reducing calories.
Nothing has motivated me more to lose weight than my daughter. I love that by learning to make healthy and delicious choices for myself, I’m slowly ingraining in her healthy habits that she can carry with her for life. It still shocks me that she would rather inhale a container of grape tomatoes than snack on crackers. (She’s already been through 2 this week!)
I had lost over 70 lbs about eight years ago and the weight is really coming back on. I don’t feel well and have lost so much energy that I find myself not cooking nor having any interest in the “right” foods at all…that is until I watched Rocco on The Rachel Ray Show. I am so excited again……the one food that I do continue to make for myself and my family is our favorite ” Mama’s Meatballs and Sauce” and I am lookng forward to igniting my interest in good foods again.

Energy and self esteem!! I have the energy to keep up with my children, 1 girl and 2 boys. They play ball in the summer and I would love to be able to keep up with them. To look good again in clothes and a swim suit this summer is my goal and this cookbook could help me do that.
I just have to say today how beautiful your food photos are – the chicken breasts and broccoli – amazing how tasty they look! I want to lose weight because I like myself better and am happier in general. Sad but true.
I would love to use this book in a long overdue journey. I would also love to say that my main motivation is health and long life – to me that is just a bonus. I am 53 years old and am really tired of being the fat one in my family. I am number 4 of 6 siblings and have a ton of nieces and nephews and I am the largest. They are all slim and trim and I want that again.
In my head I am slim and trim, in reality I am not. I quit smoking four years ago and have been gaining weight ever since. I really just want to feel better – physically and mentally, so starting this weekend when I can get to the bookstore, I am going to try it the Rocco di Spirito way!!!

Honestly, I originally wanted to lose weight so I fit in with my ‘skinny’ friends. The boys always liked them better and they got more attention. How wrong was I?!?! I finally realized that health is way more important than looks. Now, I want to be health and inspire those around me to live healthy lifestyles!

For several years now I keep telling my self I’m going to loose weight this year and it never happens. I’ll be 57 on April 26th and saw Rocco on Rachael Ray this morning on how to loose 10 lbs in 2 weeks!! He made 3 different recipes and they looked so good and healthy. My motive for losing weight is a promise I made to my late brother. I was always very thin until age 59. I have many medical problems. my parents died of heart and all things that go along with it. He worried so much about me, and that is why I want to lose the 50lbs I gained. I cannot afford to eat properly because of $$$ reasons. But I do want to do t his for myself and for him.
Turns out that I finally realized that I do like to eat but need to lose the added 45 pounds I cary around because I want to teach my teens that you really can achieve what you Dream. Mom needs to act on her words too!
I was married for 23 years and 8 of them were not good. I recently got divorced. I was depressed and when you are depressed you eat alot and eat the wrong things. I am a diabetic and I was not eating good..I wasnt eating heathly My blood sugars were high. Now I have reconnected to my grade school sweetheart that I havent seen in 32 years. I’m losing weight for me this time, I want to feel good in my own skin. Will this spread to other areas of my life…of course. I want to be able to take my 4 year old son on rides at the amusement park without worrying if I’ll fit, to go on bike rides, or just hiking through the woods.

I missed a helecopter ride to see Mt McKinley and a Glacier because I was over the weight limit, I didn’t go snorkeling in Mexico because I didn’t want to be in a swimsuit infront of people. I have been overwieght my entire adult life. I have had 3 total joints replaced 2 knees and 1 hip, and I am only 59. I know that my weight is a huge factor in these joint issues. I am trying right now to lose at least 10 pounds in another month because on April 30 my son is getting married and I am tired of being fat! We lead a very active lifestyle and I am weighng my husband down. We go camping every other weekend we are able and ride 4-wheelers, hike, ride bicycles and lost of other outdoor activities and I want to be able to keep up with my husband and be there for our future and maybe more grandkids.
My motivation is that I dont have any cute summer clothes in bigger sizes( I gave them away when I lost weight). I need to fit back in those clothes and control my blood sugar.

What’s my motivation to lose weight?
I would have to say my motivation to lose weight is hands down to be there for my family. I started a blog myself a couple of months ago to record my progress & failures. My first post briefly explains how I became an orphan – aka no Mom, Dad or even Brother at the age of 32. I see myself following in my Dad’s footsteps – he passed away due to complications of his weight – which included heart failure, high blood pressure & type 2 diabetes. Most, if not all could have been preventable if he took control, but it seemed like he never tried. I was 20 weeks pregnant with my Son when my Dad died. It was the day before we found out he was a boy. At the time I was pregnant I had gestational diabetes, so I knew I was at an even higher risk for type 2. Now that my Son is here…all I can think about is making sure he & my husband have me in their lives for a long time. I would hate for my son to watch his Mommy sit on the sidelines instead of running & playing alongside of him. So with this I joined WW and started running. Hoping to be a better example and be around for a long, long time to come.
I feel better when I weigh less.
To have less pressure on my back and reduce the pain.

My motivation to lose weight is to be healthy and be able to do whatever i want with out thinking how being heavy will hold me back from particiapting.
I was ashamed of what I saw when I looked in the mirror. I wouldn’t take pictures because then my “curves” would be forever documented. When I went out with friends I couldn’t have fun because I was more worried about how I looked. Since losing 40 pounds on Weight Watchers, I have found a new confidence. I still don’t see myself as perfect, but I can definitely bee proud of how I look.

As much as I would like to enter – but you know me Bizzy and I am on the other end of the spectrum. I can say we do eat healthy and like good for you food – without all the preservatives and fats – probably what keeps us from gaining weight. There are a lot of fruits, veggies and from scratch stuff in our house so that has always helped to.

Actually, I have motivation just to be at a healthy weight. I am 5’8″ and around 135 pounds. 10 years ago I used to be 120 pounds in high school, which I think is too skinny for my height. I like now not being freezing cold all the time because of a too low body fat percentage!

All of our family is on the heavy side and if I can inspire my girls to lose some weight then everyone’s health is better!
My motiviation is that I’m tired of feeling like crap. Too many health issues on both sides of my family for me to think that extra weight doesn’t matter. I’m now on the “all about me” bandwagon. I’ve got to take care of me, so that I’m able to take care of others!
What’s NOT a motivation at 52?? 😉 My mom died of cancer about a year ago and I was literally knocked flat… I just couldn’t get myself organized to do my regular exercise or meal planning. I can tell what havoc that played with my body and am slowly getting back into a better regime, for me and for my family.

My motivation to lose weight is so to finally feel like I love myself. And while I know that won’t automatically happen as I lose weight, losing gives me the confidence in myself to start changing the way I view myself and think of myself. So, you see, it is all about me!!!
My motivation to lose weight is to feel better. To feel better physically, but more important mentally. My confidence has changed tremendously throughout my journey! I actually CAN DO IT and it has been amazing to see just how far I can push myself. Naturally there are bumps in the road and consistency is tough, but I’m in it for a lifestyle change.
I am losing weight (Weight Watchers and working out) because I am 23, and that is just way too young to be overweight. I want to be healthy in my twenties, not huge.
I am motivated to lose weight for my HEALTH and general well being – I want to live a long life free of chronic disease, at least as much as I can 🙂

To feel better! I just don’t feel as good carrying around 5-10 extra pounds (or 55, when that was the case). I remember how easy hiking became when I lost weight.
Now, I have injuries, so I can’t run, so I gained 7 lbs, and the injuries hurt even more because of the extra 7 lbs. Vicious cycle.
My motivation is two-fold – #1-fit back into the clothes hanging in my closet #2 – show my girls that I am practicing what I preach (eating healthy and exercise). This book sounds awesome!!

I want to lose weight to help lower my blood sugar. Just had my highest A1C (only @6.4, but not what I want!) and I know that just eating better will help 🙂
I am losing weight because my age, health and self esteem require it. I just started losing weight since the beginning of the year, and frankly I have been searching for recipes that don’t include a host of artificial ingredients. For years I have avoided “recipes” and instead I just “threw things together” that are yummy. Obviously, though, the meals were not so healthy- or my husband and I wouldn’t be so overweight (obese according to the Wii Fit we purchased). I have resolved that I would no longer ‘wing it’- but would find recipes that are tried and true ~nutritious and healthy…and I will stick to cooking that way. I would absolutely love to try Rocco’s recipes! Thanks to both of you for the awesome give-away!
I would LOVE to have this book! I am actively doing Weight Watchers and joined a gym just last week. I am losing weight so that it will be easier for me to have children in the future. I have PCOS and have learned that losing weight will make it easier for me to conceive. I also turn 30 in a little over a year and I want to be healthy and happy on my 30th birthday!
I want to live a healthy life so I don’t have to rely on my kids to look after me one day 🙂

I have been convicted that gluttony is a sin. As a Christian, I feel like it hurts my witness to be obese. An idol is anything we put above God and food has become an idol because scripture tells us that our bodies are a temple of The Holy Spirit. I am no better than an alcoholic or a drug addict. I cannot criticize someone who smokes or gambles because I am doing something just as self- destructive. I want to be able to say that it was God who strengthened me when asked how I lost my weight.
My main motivation to lose weight is so I can be a parent! 🙂 My husband and I want to start to try to have a kiddo next year and if I lose weight, it will be easier. Also, I need to lose weight to be more active to keep up with said kiddo. Also, I want to feel good and enjoy life, not sit on the sidelines so much!
My motivation is my health and also, wouldn’t mind having a bikini body 🙂
I study the causes of disease (specifically cancer) and know that obesity is one of the leading causes of a lot of diseases. I first want to lose weight in order to be healthier and prevent disease in the future. Second, I want to have children someday soon and know that being obese can impact my ability to have kids. Thirdly, I want all my joints to stop hurting. And lastly, I want to look good…or at least better than I do now. I know that’s rather vain, but honestly, I don’t think anyone would prefer a blubbery body to a healthy and toned one!

Second, my motivation to lose weight is more of a motivation to train myself to exercise and to eat healthy and in moderation while I’m still young so that I’ll already have it down as I get older and it becomes even more important to make good food/exercise decisions.
My motivation to lose weight is to be HEALTHY! I want my body in tip top shape, I want my heart working properly and my liver and kidneys to be happy and my skin to be clear! I’m a huge believer that we are what we eat and frankly… I eat a little too much at times! Portion control is a giant challenge for me, always has been!

I lost my college weight and keep it off because my family has a long, long history full of all kinds of medical problems and health issues. I know that taking care of myself and staying at a healthy weight is one of the best things I can do.
I saw him do a segment on this book on the view last week…the recipes sound awesome.
My main motivation for weight loss is to live a healthy active life in my middle age life and beyond. I watched my grandmother and my mother suffer because of health issues related to weight and I don’t want to go down the same road. Plus…I FEEL so much better when I eat healthy and am active. I even sleep better…which…for a perimenopause woman, is HUGE! lol
Good morning Bizz. It’s a fine morning to have a give away and for a cookbook, what better way to start the day. Please include me in your drawing. The motivation to loss weight for me, was me. I found out you can’t do it for others, you can’t do it just cuz you have to decide for yourself when you ready. I’m not losing weight to impress anyone, I’m not losing weight to make Jim love me more, I’m not losing weight for anyone but me. Yes I choose to because I wanted to look better for Jim, I wanted to meet some requirements for the boy scouts, I wanted to fit into my wedding dress but at the start it was for me. For me to feel better, do things I couldn’t and enjoy live more. That’s why I choose to lose weight.

My motivation is myself — I’ve had a ‘spiritual awakening’ of sorts since the New Year began, and I decided to make this year about ME — my body, my relationships, my overall well-being. I am working on various areas of my life, making my dreams a reality, and just trying to be content and happy with my life 🙂
My motivation is my health. I am only 25 and I have been overweight my whole life and I am finally ready for a change. Also, the new puppy running around the house needs an exercise buddy!
Gosh, I have so many motivations! I’ve been overweight my whole life. It wasn’t until my kids got older that they really NOTICED how big I was and that was a huge wake up call. They KNOW that being overweight is unhealthy and it made me cry when my baby asked me if I was going to die early because of how big I was. How’s THAT for motivation. Plus, I totally believe in the bible and it warns against gluttony and I think that I’ve totally displeased God with getting so big. I’ve lost 30 lbs. in the last 4 months but I still have a long ways to go. I love the energy I have now and can’t even imagine the energy that I will have when I lose 50 more pounds! I love this cookbook and it’s on my list to buy! (Plus a dozen others!). Great giveaway!

I have weighed less and I have weighed more. Less is best. I feel healthier and happier when my clothes fit, look better and I am in better shape. I am better able to mentally and physically take care of those around me.

I started a new blog recently based on my new journey and lifestyle. This isn’t a diet. It is a lifestyle. And it isn’t MY journey. It is my families journey. My motivation to lose weight is to embarrass my stepdaughter who will become a U. S. Marine in May of 2013 and do that silly wedding dance down the aisle like the video that was so viral awhile back and if I don’t lower my cholesterol and now blood sugar since I just found out I am pre-diabetic, that may not happen. It is my responsibility to be a role model for my family so that they don’t join the statistics of obesity we hear so much about in the media. I am not healthy. I have an ever growing list of health issues but they don’t own me. I can and will take control and take charge because I am a former Marine and that’s what we do! I love Rocco and cook often from his previous cookbook and would love an autographed copy of this new one. My motivation comes from the desire to show my daughters that even in the middle of a family history full of diabetes and high blood pressure, we can be healthy. We can change the face (and future) of our family.
I have had a bad lifestyle and have diabetes among other things and weigh 100 pounds overweight. The problem is I am a good cook but one who cooks the old fashioned way. I have asked Dr. Oz and many others for the basics of cooking healthy. There are some things I can’t eat but I know there has to be substitutes. My husband is overweight and a diabetic also. Help.
My motivation is not dying young and being around to help the family members who need me and enjoying the grandchildren. Forgot to put that on my comment.
